I’ve been collecting recipes from all over for the last 3 years, the ones that work really well go into my notebook, a notebook I’ve had since a high school calculus Secret Santa (I’m determined to fill every page). At the moment I’m 116 pages in, some recipes were wonderful but took me hours to complete the first time, others are everyday options in my regular rotation. Below is going to be the recipe for Egg Curry I originally took from here.
- 1 Dozen Eggs
- 1 Tbsp Vinegar
- 1 Tbsp Oil
- 1 Medium Red Onion (Thinly Sliced)
- 2 Tomatoes (Diced), or if you’re looking to get rid of a can of diced tomatoes that’ll work here. 🙂
- 1 inch of Ginger (Grated) or 1 Tbsp Ginger Paste
- 4 Cloves Garlic
- 1 Cinnamon Stick
- 5-6 Cardamom Pods
- 4-5 Curry Leaves
- 2 Tsp Ground Coriander
- 1 Tsp Garam Masala
- 1 Tsp Chili Powder
- 1/2 Tsp Turmeric
- 1 Can Coconut Milk
*Plus Salt, Cilantro, and Cooked Rice to taste
- First, boil eggs by bringing a quart saucepan to a boil over medium heat, add a little bit of salt and vinegar to the water for easier peeling. Gently lower eggs into the water and boil until desired texture, for my stove 6 minutes in boiling water gives me soft-boiled eggs, for you it could be more or less according to the heat of the water and whether you let it reach a rolling boil. Once boiled, drain the hot water and gently move eggs to a bowl filled with ice water. Peel carefully.
- Heat oil (Medium Heat) and add cinnamon, cardamom, and curry leaves. After 30 sec, add garlic and ginger before cooking another minute.
- Add sliced onions and a pinch of salt, cook another 3-4 minutes or until onions are softened before adding chopped or diced tomatoes.
- Cook until tomatoes are soft before adding ground coriander, garam masala, chili power, and turmeric. Then add coconut milk and bring to a simmer.
- Cover and let simmer for 5 min before adding peeled eggs and simmering another 3 minutes.
Serve with rice, cilantro and naan if desired.
Don’t stress and remember that building a habit of cooking from scratch for yourself or your family is hard! Give yourself credit!
